Santorini fava beans are famous for their deliciousness, velvety taste, unbeatable sweetness and quick cooking.
It is a type of pea that comes from the plant “Lathyrus Clymenum L.” and archaeologists, based on findings discovered in the prehistoric settlement of Akrotiri, claim that it has been cultivated on the island for 3,500 years.
Recipe for fava beans:
Rinse the fava beans and boil them in the pot with water 4:1, skimming them. Lower the heat, add a chopped onion, olive oil, salt and pepper.
Let it simmer for 35′-45′, stirring it to thicken. Serve the fava beans with olive oil and onion.
For “married fava”, saute it and add capers and sun-dried Santorini tomatoes. 200 gr of fava beans is equivalent to 4 portions.
